Les recettes de ce grand classique prônent en général une cuisson des endives à l'eau ou à la vapeur. Je préfère le braisage, qui concentre les saveurs.
Prenez 4 belles endives parfaitement blanches. Ôtez le pédoncule et les feuilles abîmées, et creusez légèrement la base de l'endive pour en retirer la partie la plus dure et la plus amère.
Faîtes fondre une noix de beurre dans une cocotte, placez-y les endives entières, donnez quelques tours de poivre, parsemez de fleur de sel. Laissez prendre couleur en retournant une ou deux fois, puis arrosez d'un centimètre de bouillon de volaille dégraissé. Couvrez hermétiquement la cocotte et laissez mijoter à feu doux, en surveillant cependant car le bouillon ne doit pas s'assécher. Lorsqu'une fourchette pénètre aisément dans les légumes, retirez-les en conservant les sucs liquides et concentrés qui se sont formés au fond de la cocotte.
Préparez une béchamel légère et savoureuse : faîtes fondre 20 g. de beurre dans une petite casserole, lui ajoutez une cuiller à soupe de maïzena et remuez pour obtenir un roux. Délayez-le avec les sucs de cuissons des endives et 25 cl. de lait. Laissez épaissir en remuant doucement pour empêcher la sauce d'attacher et les grumeaux de se former.
Placez les endives dans un plat à gratin en les enroulant dans une tranche de jambon, couvrez-les de béchamel et de fromage râpé. Placez au four à 220° pendant 15 minutes, le temps d'obtenir une surface gratinée à souhait.
