Prenez 4 belles endives parfaitement blanches. Ôtez le pédoncule et les feuilles abîmées, et creusez légèrement la base de l'endive pour en retirer la partie la plus dure et la plus amère.
Faites fondre une noix de beurre dans une cocotte, placez-y les endives entières, donnez quelques tours de poivre, parsemez de fleur de sel. Laissez prendre couleur en retournant une ou deux fois, puis arrosez d'un centimètre de bouillon de volaille dégraissé. Couvrez hermétiquement la cocotte et laissez mijoter à feu doux, en surveillant cependant car le bouillon ne doit pas s'assécher. Lorsqu'une fourchette pénètre aisément dans les légumes, retirez-les en conservant les sucs liquides et concentrés qui se sont formés au fond de la cocotte. Ils pourront servir à la sauce ou au réchauffage des endives au moment du service.

Vous pouvez poursuivre cette recette en laissant réduire les sucs à découvert jusqu'à ce qu'ils caramélisent. Surveillez et retournez les endives pour les enrobez de ce jus épais et sucré.
